The sites are characterised by limestone-dominated soils with clay and loess components, contributing to structure, freshness and mineral character. They are trained in single Guyot with a horizontal cane (arched cane) and pruned according to the principles of soft pruning (Simonit \u0026amp; Sirch), supporting vine health and longevity. Vineyard work focuses on low yields, careful canopy management and hand harvesting to ensure precise selection of fruit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe grapes were hand harvested and carefully destemmed. Fermentation took place in large oak barrels for 3 weeks, during which the cap was regularly submerged to ensure continuous contact between juice and skins, building structure, depth, and expressive aromatics. After fermentation, the was transferred into French and Austrian barrels (1\/3 new, 2\/3 used), for 2 years on its fine lees. The extended lees contact developed fine spice, complexity, and structural depth while allowing the wine to be worked with minimal sulphur dioxide, in line with Jochen’s organic ethos.
