Basalt, granite, and blue slate make up the complex mosaic of soils and produce lively and mineral wines. The vines are planted on Paulsen rootstocks at a density of 5,000 vines per hectare, giving low yields of 30-35 hectolitres per hectare.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe grapes were harvested by hand. Following fermentation, the wine was matured on its lees for a few months with weekly bâtonnage to add texture to the palate.
