Delicate with notes of bergamot and flint stone. Very fresh on entry, dominated by the typical Viognier aromas. On the mid-palate, there is good balance between the acidic tension associated with its terroir of origin and the natural full body of the varietal and its ageing. The finish is savoury, bringing out the rustic and mineral overtones. Try with sautéed shrimp with ginger, rillettes tapas with salmon and lime, or cod tartare.
A precursor in biodynamic farming, M. CHAPOUTIER continues to push back the boundaries of the concept. Apart from the care given to the vine, one pervading principle prevails in the Observatory: love. And the idea seems to be working: a person who really believes in what they’re doing, someone who does what they do for love, gets the best out of the vine.
